Strawberry Cream Cheese Filling
  • 1 cup fresh strawberries, hulled and sliced
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large flour tortillas
  • 2 tablespoons butter
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon

Method
 

  1. Gather your ingredients: fresh strawberries, cream cheese, powdered sugar, vanilla extract, flour tortillas, butter, granulated sugar, and cinnamon.
  2. In a medium bowl, combine the sliced strawberries, softened cream cheese, powdered sugar, and vanilla extract. Mix until well blended and smooth.
  3. Spread a generous amount of the cream cheese mixture onto one half of a large flour tortilla. Fold the tortilla in half to create a quesadilla. Repeat for the remaining tortillas.
  4. Melt 1 tablespoon of butter in a skillet over medium heat. Cook two quesadillas for 2-3 minutes on each side until golden brown and crispy. Remove and set aside.
  5. Slice the cooked quesadillas into wedges. Mix granulated sugar and cinnamon in a small bowl and sprinkle over the warm quesadillas. Serve immediately.
