Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the dry ingredients: flour, oats, baking powder, baking soda, and salt.
In a large bowl, combine the wet ingredients: granulated sugar, brown sugar, Greek yogurt, applesauce, egg, and vanilla extract. Mix until smooth.
Gradually add the dry ingredients to the wet ingredients and stir gently until just combined. Fold in chocolate chips if desired.
Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
