Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and salt. Stir until well mixed.
In another bowl, mix the Greek yogurt, honey or maple syrup, and vanilla extract until smooth and creamy.
Pour the wet ingredients into the dry ingredients and gently fold them together until just combined.
Scoop out small portions of the dough, roll them into balls, and place them on a baking sheet lined with parchment paper.
Bake for 12-15 minutes until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
