- Prepare the chicken by boiling, baking, or grilling it. Shred the chicken using two forks or your hands.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers. Sauté for about 5 minutes until they soften. Stir in the shredded chicken, diced tomatoes with green chilies, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook for another 5-7 minutes.
- Preheat your oven to 350°F. Transfer the chicken mixture into a baking dish and spread it out evenly. Sprinkle the shredded cheddar cheese generously over the top.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly. Remove from the oven and let it cool slightly before serving.
