  • 1 cup barbecue sauce Choose your favorite brand or make your own.
  • 2 cups cooked rice Can use white or brown rice.
  • 1 cup steamed broccoli Adds color and nutrition.
  • 0.5 cup shredded cheddar cheese Sprinkle on top.

Method
 

  1. Combine ground beef, breadcrumbs, Parmesan cheese, and egg in a large mixing bowl. Add garlic powder, onion powder, salt, and black pepper. Mix until well combined and shape into 1-inch meatballs. Place on a baking sheet lined with parchment paper.
  2. If making your own barbecue sauce, combine ingredients in a small saucepan and heat over medium, stirring until blended. Let simmer for a few minutes.
  3. Preheat oven to 400°F. Bake meatballs for 20-25 minutes until cooked through and browned. Prepare rice and steam broccoli while meatballs bake.
  4. Assemble bowls by dividing cooked rice, adding meatballs, drizzling with barbecue sauce, adding steamed broccoli, and topping with cheddar cheese and parsley.
